At Dr. Oetker, we process animal-based raw materials to a relevant extent, such as eggs and egg white powder, cheese and dairy products, as well as salami and chicken meat. Our Responsible Sourcing Policy outlines Dr. Oetker’s position on key animal welfare topics. With this in mind, we have already established animal welfare policies for chicken, aligned with the European Chicken Commitment (ECC), and for eggs, with the goal of using cage-free eggs. We are currently expanding this commitment by developing an animal welfare purchasing policy that defines additional species-specific goals.

Developing Our Pizza Recipes Further

In addition to the many vegetarian and vegan pizzas you know and love, we are launching our first hybrid pizza: the new Big Americans BBQ Chicken Style. We have partly replaced chicken breast with a plant-based alternative, based on wheat protein, without compromising on taste or texture.

How Ingredient Choices Affect the Product Carbon Footprint

With our Big Americans BBQ Chicken Style, we have made changes to the recipe that affect its Product Carbon Footprint (PCF). The Product Carbon Footprint (PCF) describes the greenhouse gas emissions generated over the life cycle of a product – from raw materials to production. One factor influencing the PCF is the choice of ingredients. By partially replacing chicken breast with a plant‑based alternative based on wheat protein, we can demonstrate through our calculations that the Product Carbon Footprint (PCF) of our Big Americans BBQ Chicken Style, is reduced by 14%. This demonstrates how ingredient choices can contribute to a lower Product Carbon Footprint (PCF) – without compromising on taste or texture. Higher Animal Welfare Standards for Chicken

Most of the chicken we use is still chicken meat (51%), but it comes from farms that
meet higher animal welfare standards through the European Chicken Commitment (ECC). This offers animals, among other things, slower growth, improved air quality, more daylight and more space. In conventional broiler farming in Germany, there are typically up to 26 chickens per square meter, while ECC standards limit this to 20 chickens per square meter. The extra space gives the birds more room to move and supports the welfare objectives of the ECC standard.
